Cornish Game Hen Stuffed with Sausage and Tre Stelle® Grana Padano

Instructions

• • Preheat oven to 375°F (190°C).
  • Preparation: Remove the Italian sausage from casing and break into pieces. Finely chop the onions. Finely chop the fresh mushrooms. Finely chop the fresh rosemary.
  • In a medium skillet, add sausage meat and cook until browned.
  • Remove from heat and drain off excess fat.
  • To the same skillet, add 2 tbsp of the butter, onions and mushrooms; cook until softened.
  • Remove from heat, place in a medium bowl and allow to cool; add fresh breadcrumbs, Tre Stelle® Grana Padano Cheese, rosemary, season with salt and pepper. Lightly stuff each Cornish hen with stuffing; close openings with skewers.
  • Place hens in a roasting pan and bake for 1 hour.
  • Baste periodically with remaining melted butter.
  • Remove skewers before serving.
